Coqui Thau – Where Simplicity Tastes Like Mastery Tucked into the silent heart of the oyster basin, Coqui Thau delivers exactly what you didn’t know you were craving: zero-frills excellence. Their oysters are plump, briny, and layered with a minerality that lingers. The shell tells the story of the lagoon, and the meat finishes it off in a whisper. Paired with a cold bottle of Picpoul de Pinet—specifically Poule de Pic—you’re not just eating oysters, you’re eating time, tide, and terroir. One of the best kept secrets on the Route des Huîtres Sauvages.

Always come here for the freshest oysters and seafood. Try the gratinees version withbtheir secret version, and if you are feeling adventurous, the huitre gourmand (chocolate oyster) with a red noilly prat vermouth. Best setting overlooking the Etang du Thau and Sete. I'm loathe to review as scared they will hecome to popular!
